My parents were in last weekend for my birthday and the big UVA vs UMD basketball game, and we decided that we were going to stay in for the oscars, and make/order in a lot of food. We had cheese and crackers, mango margaritas, chips with salsa and guacamole, and a great pizza and salad from Mellow Mushroom. Clearly we weren't lacking food.
The two homemade things were the margaritas (my dad's specialty) and the guacamole. I had never made guacamole before, so I kind of made it up as I went along. I still think it was missing something, but my parents liked it!
Recipes:
Mango Margaritas:
Ingredients:
Sugar, for rim
1/2 lime, quartered
1/2 cup tequila, good quality
1 oz triple sec (or Cointreau liqueur or Grand Marnier)
2/3 cup mango nectar
2 oz simple syrup
3 tbsp lime juice (fresh)
1 cup ice cubes
lime slices for garnish
Directions:
Rim margarita glass or cocktail glasses with sugar.
Pour ingredients into cocktail shaker and shake.
Strain into glasses.
Squeeze juice from 1 lime quarter into each drink and garnish glass with lime slice.
This only makes 2-3 good sized drinks, so you may want to double (or triple/quadruple!) the recipe.
Guacamole:
Ingredients:
2 avocados, cored and chopped
2 roma tomatoes, chopped
1 garlic clove, minced
2 T red onion, minced
juice from 1/2 lime
dash crushed red pepper
1/4 tsp cayenne
Directions:
Mix everything together - add salt and pepper to taste. Serve with tortilla chips.

The Brutus Salad - really good!
And the Mega Veggie Pizza - always a good choice.
Basically you can't go wrong with Mellow Mushroom - all of their food is great
