I have used this twice so far and it works really well! So far I just have some minor issues with it. First - the instructions are in Italian! Good thing it was easy to put together. However, there's one piece I have no idea where to put. I've rolled out sheets of noodles for lasagna and ravioli, and I've made cut noodles with the fettuccine attachment. The handle won't fit very well into the spaghetti attachment, so I'll have to call CSN. Also, if you're clamping it to your counter, I would recommend putting the cutting attachment on it, even if you aren't using it. Its weight isn't evenly distributed and the cutting attachment helps keep it in place.

Strawberry Cheesecake Ice Cream

After making my strawberry scones, I still had a lot of strawberries left.  One of the first things I thought of making was ice cream.  One problem - I didn't have an ice cream maker!  The night before I went strawberry picking, I ordered an ice cream maker from amazon.  It was actually a great deal, especially after my $20 gift card.
This ice cream is oh so good.  If I was making it for a party, I would have made the graham cracker crust rounds.
I only have a few things I would have changed - mostly just my own technique.  I recommend mashing the strawberries really well.  I wanted to have some chunks still there, but they were so frozen in the ice cream that I think I would have preferred more of a puree.  The original recipe said that the strawberries could be folded into the ice cream, but I think that negatively affected the texture.  As long as there's room in the ice cream maker (there wasn't any left in mine), add it right in the mixer in the last 5-10 minutes.  I made 2/3 of the recipe, and the ice cream base on its own filled my 1 1/2 quart ice cream maker.  Also, make sure the cream cheese is completely at room temperature before using.  I didn't let it sit out long enough, and it didn't mix uniformly into the custard.  Actually, that may have been due in part to the cold custard.  It might be best to mix the custard into the cream cheese when the custard is still a little warm, and then chill that combination before freezing.
But regardless of all of that, the ice cream is so delicious!  I may never buy ice cream again!

Recipe: Strawberry Cheesecake Ice Cream (from Apple Pie, Patis and Pate)
Ingredients: (I am listing the amounts I used - 2/3 of the original recipe)
2/3 cup strawberries, hulled and quartered
1/3 cup sugar

2 egg yolks
1/2 cup sugar
1 2/3 cups whole milk
1/3 cup heavy cream
2/3 tsp vanilla extract
pinch of salt

2/3 lb cream cheese (I only had 1/2 lb so I made up for the rest with greek yogurt)
1/3 cup sugar
2/3 tsp lemon zest
1 tbsp lemon juice

Directions:
Mash the strawberries with the sugar, cover and refrigerate for at least 2 hours.
Whisk together the egg yolks and sugar until thick and light.
In a saucepan, bring the milk to a gentle simmer.  Add a small amount of the milk to the eggs and stir well, then ad the rest slowly.  Heat over a double boiler while stirring constantly, just until the mixture thickens to coat the back of a spoon.  (Mine never got that thick, but it worked out just fine.)
Remove immediately from the heat.  Stir in the cold cream to stop the cooking, followed by the vanilla extract and salt.  Strain using a fine mesh strainer.
Cool the custard completely at room temperature.  Store in an airtight container and refrigerate until thoroughly chilled.
Using a wooden spoon or the paddle attachment of your stand mixer, beat the cream cheese (and yogurt, in my case) with the sugar, lemon zest and lemon juice until light and smooth.  Slowly add the chilled custard and mix until smooth.
Pour into the chilled bowl of your ice cream maker, and start churning!
When it is almost set up, pour the sugared strawberries into the machine.
Serve immediately for a soft-serve consistency, or store in an airtight container and freeze.

The best gift ever

I'm not quite sure how I let 3 weeks go by before squealing about this amazing gift from my parents.  Basically they got me the best birthday gift ever!  And I realize how much of a nerd I am for loving my gift as much as I do.
But how could you not love this??  (Don't mind my reflection!  Or my messy table.)

I'm ashamed to say that I've only used it once so far (recipe to be coming soon).  But I already have lots of plans for it....

Post-Exam Meal

Saturday night I finished a pretty big take-home exam.  It was closed-book, which I think is just mean...but anyway, I survived it!  After a week of studying, my fridge was getting kind of empty.  Now empty is definitely a relative term.  I've seen some very empty fridges.  And mine always has something in it.  But on Sunday, nothing looked good to make into dinner.  Of course, this meant I had to look through all of the ads for nearby grocery stores to see who had the best deals.  And Harris Teeter had tilapia on sale!  I love tilapia - it isn't too "fishy," it's always cheap, and it's easy to cook.  I looked through my recipes and found one that sounded amazing - Parmesan Crusted Tilapia with Tomato-Basil Cream Sauce.  I found the recipe at Life's Ambrosia, one of the blogs I read regularly.  Des said she served it with mashed potatoes, so I decided why not - I'll try two of her recipes!
I made a few changes, but mostly because of what I happened to have, and because of the time of year.  For the fish - I used frozen cubes of basil instead of fresh, half-and-half instead of cream, plus I doubled the amount of fish, tomatoes and garlic but left everything else was fine.  It worked out perfectly.  I bought a pound of fish - 4 fillets.  Which means I have dinner for almost the entire week.  It's holding up pretty well, too.  I think next time I would use less oil for the sauce, or maybe use butter instead?  I don't think my cream liked mixing with the oil.  The sauce is delicious - I think it would make a great pasta sauce as well, maybe with some shrimp?  The tomatoes are perfect in it - they're little bursts of sweetness throughout the sauce.  This would be even better with fresh basil, over the summer.

For the mashed potatoes - I used 1/4 cup instead of 1/2 cup of half-and-half.  And I used kerrygold butter.  I was expecting the butter to turn it into something extraordinary, but I don't think I could tell a difference between that and the regular old stuff.  After the first night, I decided it needed a little extra something, so I added more s&p, and grated some aged white cheddar on top (leftover from my mac n cheese).  I was really excited to make the mashed potatoes, since I had just bought a potato masher from The Happy Cook!  It's cute, and fun to use.


Parmesan Crusted Tilapia with Tomato-Basil Cream Sauce (adapted from Life's Ambrosia)
Ingredients:
6 tbsp olive oil
4 cloves garlic, minced
30 grape tomatoes, halved
1/2 cup half-and-half
2 cubes (2 tsp) frozen chopped basil
4 tilapia fillets (1 lb)
kosher salt and freshly cracked pepper
1/4 cup flour
1 egg, beaten
1/2 cup shredded Parmesan cheese
1/2 cup panko breadcrumbs
1/2 tsp granulated garlic

Directions:

Heat 2 tbsp of olive oil in a medium skillet over medium heat.  Add garlic and cook 1-2 minutes.  Add grape tomatoes and basil and cook for 10 minutes, until the tomatoes have released their juices.  Reduce heat to medium low and add half-and-half.  Let simmer for 15 minutes (or as long as you need to get everything ready).

Meanwhile, heat 2 tbsp of olive oil in a skillet large enough to fit two fillets.
Rinse and pat dry the tilapia fillets.
Combine the flour, salt and pepper in a flat dish.
Put the beaten egg in another flat dish.
Combine the parmesan, panko and garlic in a third flat dish.
Dredge the fillets in the seasoned flour.  Shake off excess.  Dip in egg.  Press into parmesan/panko mixture.
Place in heated skillet, two at a time, and cook 3-4 minutes per side.  (Thicker pieces may take longer to fully cook.)  Fish will be golden brown and will flake easily when done.
Add another 2 tbsp to the skillet, and repeat with the remaining 2 fillets.
Lay fish on a serving platter and spoon sauce over the top.

Creamy Mashed Potatoes (adapted from Life's Ambrosia)
Ingredients:
2 lbs russet potatoes, peeled and cut into chunks (I left the peel on mine, it's up to you)
3 tbsp butter
1/4 cup half-and-half
salt and pepper to taste
Any extras - I added some white cheddar cheese

Directions:
In a large saucepan, add enough water to cover the potatoes.  Boil until they are fork tender.  Warning - the water tends to get really foamy and attempts to boil over.  When they are soft, drain the water and put them back in the pot.  Add the butter, half-and-half, salt and pepper, and mash until light and fluffy.  Add your desired extras, and fold in.
